Way back there was this really trendy juice spot on the beach. I kid you not, a little container of juice cost the equivalent of a movie ticket. Despite this outrageous price, there was a line anytime I walked by. Now before I start coming across as being slightly judgmental, let me start by saying: I too visited the insanely expensive juice bar and I will tell you one thing-it was delicious.
My favorite drink was an almond milk smoothie, sweetened with dates and a hint of cinnamon. Every sip had just the right amount of POP from the chia seeds. However, me being me, I just couldn’t bring myself to buy something that I’m perfectly capable of making at home. Especially when I can do it for a fraction of the price, so I got to experimenting. After a few attempts, I nailed it and this my dear is my version of the expensive juice bar smoothie.
I have a Vitamix, which has enough power to pulverize unsoaked almonds-which I buy in bulk from Costco, obviously, this is me we’re talking about here. If you have a regular blender, this might be challenging. My best advice would be to soak the nuts over night-or even a day or two.

Almond Milk Smoothie
Ingredients
- 1 cup unsalted almonds
- 7 cups water
- 1 tsp vanilla extract
- 1 cinnamon stick
- 10 dried dates
- 1 tbsp honey add more to taste
- 1 pinch kosher salt
- 5 tsp chia seed
Instructions
- Add everything except the chia seed into the blender.
- Starting on low, gradually increase the blender speed to 10.
- Blend for 2 minutes.
- While blending, add 1 tsp of chia seed to each glass.
- Poor liquid into glasses.
- Store in fridge for up to 5 days or enjoy immediately with ice.
