Instant Pot Split Pea Soup

Ingredients

  • 1/4 cup olive oil or avocado oil
  • 1/2 onion chopped
  • 2 medium carrots chopped
  • 2 celery sticks chopped
  • 6 garlic cloves minced
  • 7 kosher hot dogs sliced on the diagonal
  • 7 cups water
  • 2 bay leaves
  • 2 cups dried split peas
  • 2 tsp kosher salt
  • fresh pepper

Instructions

  • In your pressure cooker or Instant Pot, heat oil and saute onion, carrots and celery until onion is translucent.
  • Add garlic and stir until fragrant.
  • Add hot dogs stir until they have some color on them.
  • Add split peas, water and salt.
  • Cover, bring to high pressure and cook for 15 minutes in the Instant Pot or 11 minutes in the standard Pressure Cooker. Quick release, add more salt and pepper if needed, then enjoy!

Notes

This recipe DOES NOT translate into a slow cooker recipe. I've tried it. Promise, it will be edible, but not something you would eat willingly. Say no to the slow cooker on this one.
 
Be sure to use a 6QT or larger pressure cooker. Split peas can froth and clog the valves, which could lead to painting your kitchen split pea green.
