I had a craving for nacho cheese sauce one Saturday evening to go with my The-Kids-Are-In-Bed-and-It’s-Quiet wine. What? That never happens to you? Well let me tell you, when you get a craving for some ouey, goey nice and spicy cheese sauce, you can, and will make this.
Why torture yourself making it from scratch?
For the longest time, I really thought the only way to get my cheese sauce fix was to actually buy franken-cheese. Now, let me start off by saying that there absolutely is a place for this stuff, but a.) it’s kind of overpriced and b.) it’s shelf stable cheese, as in, the cheese needs no refrigeration, that can’t be great for you.
Enter, my Nacho Cheese Sauce. I promise, this cheesy masterpiece comes together in about the same time, if not less, than what it takes to heat up Franken-Cheese and mix it with jarred salsa. All of the ingredients are natural, so you know exactly what you’re eating.
Fine, but how do you even make this stuff?
This sauce is super forgiving, minus the milk, flour, cheese olive oil, you can omit anything else. You read me right, just don’t put it in. You can even throw this over pasta and what do you have….Creamy Mac & Cheese. It’s the recipe that keeps on giving.

Nacho Cheese Sauce
Ingredients
- 3 tbsp olive oil
- 1/4 cup red onion diced
- 1 jalepeno chopped
- 1 tomato diced
- 1 garlic clove minced
- 2 tbsp gluten free flour or regular flour
- 2 cups milk
- 1 cup sharp cheddar cheese Any hard cheese will work.
- 1/2 tsp cayenne pepper
- Salt & Pepper
Instructions
- In a saucepan, heat oil over high heat.
- Once shimmering, add onion and jalapeno. Cook until onion is translucent, 2-3 minutes
- Add tomato and cook until mushy, 2-3 minutes.
- Add garlic and cook until fragrant 1-2 minutes.
- Add flour and mix until a uniform paste forms, 1 minute.
- Add milk and stir until thickened, 1-2 minutes
- Slowly add cheese until melted and combined.
- Add cayenne pepper, 1/8 tsp at a time until desired spice level is reached.
- Season with Salt and Pepper.
