Who added another bebe to the family during a pandemic? WE DID! Yep, we went and added another perfect little munchkin to the mix, and do we ever have our hands full. If we thought our recipes needed to be easy to make before, get ready for them to be even easier, because, well, two kids homeschooled and an infant is legit cray cray. So, let’s get this easy recipe partay started with one of our breakfast faves: French Toast Cake.

Mmmhhmmm, say it with me now: Overnight French Toast Cake. Yep, it’s a thing, and if you haven’t heard of this thing, well, get on it because we’re about to make your weekend/Holiday/made-it-through-2020 morning a little extra special. Yes, you can have cake for breakfast, especially when it’s technically French Toast, right? I mean, eggs, dairy, and bread are major breakfast staples, am I right?

Our French Toast Cake is a little different from other recipes. Those perfectly crisp edges, thanks to tons of surface area in a Bundt pan, will bring lots of smiles. An added benefit of a Bundt pan: no soggy, uncooked middle to deal with when you’re cooking for a crowd. Let’s agree to avoid mornings going sideways. Sprinkle on a little powdered sugar, serve with your fave syrup and some fresh fruit and viola: socially acceptable cake for breakfast.

We love whipping this cake up the night before, then popping it in the oven when we get around to it in the morning. There happened to be massive amounts of Challah lying around in our house, but feel free to use your favorite, chunky cubed bread-just be sure to have at least 4 cups on hand. Ingredients

  • 1 loaf challah bread cut into 1 inch cubes
  • 6 eggs
  • 2 cups heavy cream
  • 3 cups whole milk
  • 1 tbsp ground cinnamon
  • 1 tbsp vanilla extract
  • 1 cup sugar
  • powdered sugar to garnish
  • butter to grease pan
  • maple syrup

Instructions

  • Butter a standard Bundt pan.
  • Cube challah and add to pan.
  • In a mixing bowl, use a fork to whisk eggs, cream, milk, vanilla, cinnamon, and sugar.
  • Pour mixture over bread. Using a fork, squish down bread into the liquid.
  • Cover with plastic wrap and let hang out in the fridge overnight.
  • In the morning, set pan on the counter and pre-heat the oven to 350 degrees. Once you have the right temp, bake the French Toast Cake for 1 hour.
  • Cool for 10 minutes, use a knife to gently separate cake from sides, then invert (fancy word for transfer to) a serving plate. Sprinkle with powdered sugar and serve with maple syrup.
