Chicken and Rice Skillet

Chicken and Rice Skillet

What’s not to love about a one pot meal?

One pot meals make life easy, fact. If you don’t already have a few of them in your rotation, this Chicken and Rice Skillet is calling your name. My vegetarian and meat eaters all love this skillet. The offending items are big enough to be removed with no tears shed. And I love this recipe, because: chicken and veggies in ONE POT!

Playground Dinner (and Spinach Pasta Sauce)

Playground Dinner (and Spinach Pasta Sauce)

A full bag of spinach, a few cloves of garlic, a little cream, a handful of Parmesan cheese take you across the dinner finish line. The only thing making it better is having your kids eat it somewhere where you won’t have to scrub down a high chair.

I despise my highchair. In a first-time-parent snafu, I opted for cushy, modern and white! How naive I was to think it would stay that color. I tried though; I would spend an unacceptable amount of time scrubbing every nook and cranny, trying to rid it of whatever remnant of dinner clung to it’s leathery, upholstered surface. Needless to say, that plastic, no nooks, no crannies, once over, wipe-down, $20, Ikea highchair made it’s way into our home when my younger one hit 18 months. Experience at its finest.

How to Make an Artichoke

How to Make an Artichoke

No longer a Restaurant-only mystery.

Growing up in California, artichokes were as common as potatoes on the dinner table, at least in my house. This might have had something to do with the fact that my great-grandmother had them sprouting up all over her backyard. I can remember the artichokes, growing like roses from the thick, hearty stems. We would boil them until they would bloom and dip them into golden bowls of melted butter, laced with salt and parmesan cheese. Good imagery, right? Now back to this spiky artichoke sitting in front of you.

Throw in some automation-like the Instant Pot, a tasty recipe (hellooooo Instant Pot Curried Lentil Stew), and you can have dinner on the table in no time at all.

Gluten-Free, Mango Upside Down Cake

Gluten-Free, Mango Upside Down Cake

No one will ever guess this delectable dessert is gluten-free.

I made this Gluten-Free Mango Upside Down Cake for my husband the other night, you know because it was Tuesday. Upside Down cakes are kind of his thing, and I wanted to make something special. Because in my book, making food for my family is love on a plate, awww, I know, so obnoxious. There was just a minor hurdle to overcome: I had to make it gluten-free.

Leftover Nachos

Leftover Nachos

A Creative way to use up your leftovers.

We’ve all been there, staring into the abyss that is a fridge full of odds and ends. One kid is complaining about a Lego plane falling apart for the hundredth time, while the other starts with the questions, ”but why do I have to do this, MOM!” You have about 30 minutes before one of you loses it, and delivery just isn’t an option. Enter Leftover Nachos. Yep, I’m suggesting it, give them what they crave and make your life a little easier. Plus they’re made with chips packed with seeds, so yay for that.
