An Asian inspired bowl to get your Banh Mi fix.

There’s something about that sweet, spicy, vinegary goodness that accompanies a delicious Banh Mi sandwich. It’s has a little fire, balanced with a subtle sweetness, and then the vinegar that cuts to the point. It’s one of my favorite things to eat, but ugh, I rarely have everything for it. I decided there has to be another way to bring me closer to my beloved Banh Mi. Enter: the vegan, Banh Mi Bowl.

No, I’m not talking about an old iPhone model, I’m talking about me. You see, long before (well maybe not THAT long before) I had kids, I was a fashion model. Yep, little ‘ol me flew all over the world working for some pretty awesome clients. It was a super fun time in my life, with hints of that rumored glamour here and there. But here’s the truth, aside from the fun and adventure, which filled the majority of my career, it could be incredibly lonely at times. I missed home, A LOT.

I know what you’re thinking: there is no “winter” in Miami. And yes, I admit, you’re kind of right, partially at least. If you’re comparing our mildly cool weather to say, that of New York, then our sad little excuse for winter is precisely that, laughably nonexistent. But here in Miami, land of the Tropics, anything below 72 degrees is cold. I kid you not if it’s 71.99 degrees out, we Miami locals will break out whatever jacket and boots we own. I hear you laughing over there in the North East-rightly so.

Baseball Mom (and Chickpea Tostadas)

My kids LOVE baseball. It’s the first and last thing they think of everyday, and their absolute favorite free time activity. I’ve never seen them so insanely happy to do anything-which is fantastic. In fact, their genuine happiness makes the 3,000 “breathe” alerts I get from my Apple Watch worth it. Apparently rushing from one thing to the next stresses me out, go figure.
