Instant Pot Lasagna Soup

Instant Pot Lasagna Soup

Toss it in and go, this recipe comes together quickly with little hands on time. Robust tomato broth, veggies, noodles and gooey cheese is just what your family needs for the weeknight dinner rush. Bring on the soup weather.

A funny thing happens in Miami during the fall, aside from it officially becoming soup weather. Almost overnight, our hot and humid climate drops. Little by little, we reach a cool and crisp (wait for it) 72. Oh yes, and as that temperature drops slightly, it’s pretty easy to tell the locals from visitors. I kid you not; every local will break out all pairs of boots, wool coats, and sweaters they own. It’s my favorite time of year. I have boots to wear, people, and I can’t do it in 80-degree weather!

Vegetarian Skillet Enchiladas

Vegetarian Skillet Enchiladas

The perfect mid-week dinner to please the whole family.

Before we jump right into our Vegetarian Skillet Enchiladas, let’s talk about the elephant in the room. That one thing in the kitchen that we will avoid at all costs. For us, it’s doing the dishes. Seriously now, why is it that dinner not only has to be planned, prepped, and cooked but THEN ALSO CLEANED??!! And how is it 2019 and there are only Robots to vacuum our floor?? But we digress.

Quick and Easy Vegetarian Chili

Quick and Easy Vegetarian Chili

You wont miss the meat in this Vegetarian wonder.

We aren’t a vegetarian household, but we try to keep things heavy with those fresh veggies. Which, can be a little challenging at times with a vegetarian, a meat lover, a health nut, oh, it all has to be gluten-free. A tear-free table is a happy table, so we try our best to accommodate all the tummies in our family, without adding extra work for ourselves.

Instant Pot Split Pea Soup

Instant Pot Split Pea Soup

A Childhood Take on Classic Split Pea Soup, Ready to eat in 20 minutes.

Split pea soup has always been one of my favorites. It’s hearty, comforting and packed with flavor. It’s a soup that comes together with a few staples and thanks to the Instant Pot, all you need to do is quickly chop and sauté, then it does the rest. There’s no babysitting here.

Instant Pot Cabbage and Peas

Instant Pot Cabbage and Peas

Stop Giving Cabbage a Bad Wrap.

Something magical happens to cabbage in the pressure cooker. With the high temperature, the cabbage becomes sweet and gains this luscious texture that can only be described as “really yummy” by my children. Yes, you read that right, my kids love this stuff.

Chicken and Rice Skillet

Chicken and Rice Skillet

What’s not to love about a one pot meal?

One pot meals make life easy, fact. If you don’t already have a few of them in your rotation, this Chicken and Rice Skillet is calling your name. My vegetarian and meat eaters all love this skillet. The offending items are big enough to be removed with no tears shed. And I love this recipe, because: chicken and veggies in ONE POT!

Playground Dinner (and Spinach Pasta Sauce)

Playground Dinner (and Spinach Pasta Sauce)

A full bag of spinach, a few cloves of garlic, a little cream, a handful of Parmesan cheese take you across the dinner finish line. The only thing making it better is having your kids eat it somewhere where you won’t have to scrub down a high chair.

I despise my highchair. In a first-time-parent snafu, I opted for cushy, modern and white! How naive I was to think it would stay that color. I tried though; I would spend an unacceptable amount of time scrubbing every nook and cranny, trying to rid it of whatever remnant of dinner clung to it’s leathery, upholstered surface. Needless to say, that plastic, no nooks, no crannies, once over, wipe-down, $20, Ikea highchair made it’s way into our home when my younger one hit 18 months. Experience at its finest.

Instant Pot Curried Lentil Stew

Instant Pot Curried Lentil Stew

Get your Lentil Stew on in 20 minutes or less.

Pressure cookers are excellent; in fact, I have 3: an Instant Pot, a Kuhn Rikon 6qt, and Kuhn Rikon 3.7qt. They’re efficient, easy to use and their recipes usually only involve one pot. Throw in some automation-like the Instant Pot, a tasty recipe (hellooooo Instant Pot Curried Lentil Stew), and you can have dinner on the table in no time at all.

Leftover Nachos

Leftover Nachos

A Creative way to use up your leftovers.

We’ve all been there, staring into the abyss that is a fridge full of odds and ends. One kid is complaining about a Lego plane falling apart for the hundredth time, while the other starts with the questions, ”but why do I have to do this, MOM!” You have about 30 minutes before one of you loses it, and delivery just isn’t an option. Enter Leftover Nachos. Yep, I’m suggesting it, give them what they crave and make your life a little easier. Plus they’re made with chips packed with seeds, so yay for that.

Creamy Tomato and Orzo Soup

Creamy Tomato and Orzo Soup

A tasty twist on a tried and true soup classic.

It’s a dinner drama re-run and you’re unfortunately the main character…again. 30 minutes on the clock, a kid or two starting to lose it over their homework as you wonder, “WHAT’S FOR DINNER???!!!” Take a deep breath, look in your pantry, I bet you have just about everything to make this spot-on creamy tomato soup, so let’s get to it. You need to get dinner on the table.
