Instant Pot Lasagna Soup

Instant Pot Lasagna Soup

Toss it in and go, this recipe comes together quickly with little hands on time. Robust tomato broth, veggies, noodles and gooey cheese is just what your family needs for the weeknight dinner rush. Bring on the soup weather.

A funny thing happens in Miami during the fall, aside from it officially becoming soup weather. Almost overnight, our hot and humid climate drops. Little by little, we reach a cool and crisp (wait for it) 72. Oh yes, and as that temperature drops slightly, it’s pretty easy to tell the locals from visitors. I kid you not; every local will break out all pairs of boots, wool coats, and sweaters they own. It’s my favorite time of year. I have boots to wear, people, and I can’t do it in 80-degree weather!

Cheat Meals (and Magic Sauce)

Cheat Meals (and Magic Sauce)

Cheat Meals and I are friends. Really close friends. If a Cheat Meal were a person, we would hang out at the pool and drink wine all the time-which would be a lot, since Cheat Meals are big on keeping you out of the kitchen. No, this type of “Cheat Meal” is not the bad dining choice you made on your dieting day off. This is a throw together in 15 minutes, forget about it for a few hours, and come home to absolute dining perfection-which will taste like you worked for hours. See. You want to hang out and have wine with Cheat Meals too. Continue reading “Cheat Meals (and Magic Sauce)”

Coffee (and Company Roast)

Coffee (and Company Roast)

There’s something to be said for the power of Coffee. I, for one, know that once I’ve had the magic elixir, I am a super mom. No joke. Breakfast, made! Kid’s messes, cleaned with a smile! Lunches, packed! House, tidied! Mt. Laundry, conquered! I obtain baby food repellant powers; it flies in any direction but mine. I even manage to shower, shave my legs AND put on makeup. It’s amazing. Continue reading “Coffee (and Company Roast)”

Playground Dinner (and Spinach Pasta Sauce)

Playground Dinner (and Spinach Pasta Sauce)

A full bag of spinach, a few cloves of garlic, a little cream, a handful of Parmesan cheese take you across the dinner finish line. The only thing making it better is having your kids eat it somewhere where you won’t have to scrub down a high chair.

I despise my highchair. In a first-time-parent snafu, I opted for cushy, modern and white! How naive I was to think it would stay that color. I tried though; I would spend an unacceptable amount of time scrubbing every nook and cranny, trying to rid it of whatever remnant of dinner clung to it’s leathery, upholstered surface. Needless to say, that plastic, no nooks, no crannies, once over, wipe-down, $20, Ikea highchair made it’s way into our home when my younger one hit 18 months. Experience at its finest.

Fancy Cookware (and Easy Braciole)

Fancy Cookware (and Easy Braciole)

Perfect for a comforting meal at home, or wowing your dinner guests.

Unknown to many people, my husband (hi, hubby!), is a professionally trained chef. The first time he made me dinner, he whipped up tacos with homemade mango salsa. Yeah, I know, pretty impressive. To top it off, that was his  “Oh-I’ll-just-whip-this-up-in-two-minutes-dinner.” He’s a foodie. I’m a foodie. It’s a match made in heaven.

Cooking Burnout (and Ropa Vieja)

Cooking Burnout (and Ropa Vieja)

I don’t want to cook. Really now, the Eat24 app has been my BFF for the last few weeks. Between Thanksgiving, Hanukkah, Christmas and the long list of Holiday parties and events, I’ve been clocking some serious kitchen time. I LOVE cooking, but the weeknight dinners between those big feasts are starting to get to me, go figure. See, I am human. Don’t tell my kids. Continue reading “Cooking Burnout (and Ropa Vieja)”

The 5am Wake-Up (and Veggie Lasagna)

The 5am Wake-Up (and Veggie Lasagna)

What is it with kids and their dislike for sleep? I just don’t get it. All moms know the feeling: dozing off, warm and snug, dreaming of something fantastic, like never folding laundry again, then, WHAM!, a little ankle biter runs into your room, screaming something ridiculous, like, “why is the door looking at me?!” Como what? Have you lost your mind?  Of course, you think this to yourself, or did you? I can’t remember. Continue reading “The 5am Wake-Up (and Veggie Lasagna)”
