No, I’m not talking about an old iPhone model, I’m talking about me. You see, long before (well maybe not THAT long before) I had kids, I was a fashion model. Yep, little ‘ol me flew all over the world working for some pretty awesome clients. It was a super fun time in my life, with hints of that rumored glamour here and there. But here’s the truth, aside from the fun and adventure, which filled the majority of my career, it could be incredibly lonely at times. I missed home, A LOT.
One of my absolute favorite things to think about while I was traveling was all my favorite foods I would eat when I would get home. You read me right, because trust me, some countries were a little challenging. I was what some parents would call a “picky eater.” But I’ll leave that for another post.
Back to favorite foods. One of my all time favorite things to eat are tacos. There are so many different types, but these are the ones I grew up eating at home. These little babies are so insanely Americanized it’s embarrassing. You’ve heard of Tex-Mex, well, I’m describing them as Cali-Mex, because that’s where I grew up eating them. Growing up in Southern California, there is an enormous Mexican influence on food. And. It’s. Amazing.
We always had these dreamy little tacos in a crunchy corn tortilla, but being older and wiser, I started saving time and just warming up the tortilla. Every once in a while, like today, I fry some up for nostalgia’s sake.The light spice in the meat, combined with the tang of the ketchup (see, I told you Americanized) and the spice in the Tabasco, it’s hard to stop eating them. So I share with you, my quick and easy taco recipe. How does your family do taco night?

Tacos (Cali-Mex Style)
Ingredients
Taco Filling
- 1 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp dried oregano
- 1 lb ground beef turkey works too
Toppings
- 1 tomato diced
- 4 romaine lettuce leaves chopped
- 1 cup shredded cheddar
- 1/2 cup onion diced
- 1/4 cup cilantro chopped
- ketchup
- red tabasco
Taco Shells
- 20 corn tortillas crunchy or soft
Instructions
- In a large saute pan, over high heat, add oil.
- Once oil is shimmering, add ground beef and flatten with a spoon.
- Sprinkle on all the seasonings.
- Mash the ground beef with the back of a wooden spoon and stir until cooked. 5-7 minutes.
- Assemble tacos and enjoy
